Pasta with Meatballs

I really love to use sausage meat to make meatballs – it’s already full of flavour, and gives you a lovely texture when cooked. It’s also a really cheap way to do it, so I thought it would make a perfect budget meal (for more on why we’re on a budget, click here to visit my Live Below the Line page). Combined with a tomato and red pepper sauce and served with pasta, this made for a really good meal at a very low price, and there was even enough for a one-person lunch the next day.

Serves: 2 Cooking Time: 30 minutes


  • 1 onion
  • 2 cloves of garlic
  • Half a red pepper
  • Butter
  • 4 sausages
  • 1 tin of chopped tomatoes
  • A pinch of curry powder
  • A pinch of salt
  • A pinch of oregano
  • 250g pasta, to serve
  • A very small amount of grated cheese, to serve



Start by peeling and finely chopping the onion and garlic, and get them sizzling in a scoop of melted butter. Deseed the pepper and wrap half of it in clingfilm, to keep in the fridge for another meal. Finely dice the remaining half and add to the pan with the onions.


While the vegetables fry, remove the skin from the sausages and shape the meat into balls with your hands. When you’ve used it all up, add to the pan with the veg, and stir regularly to make sure the meatballs don’t stick. Once the onion looks nice and soft, add the chopped tomatoes and seasoning, as well as a splash of water, and leave to bubble for ten minutes or so.


Cook your pasta according to the instructions on the packet, and then mix through the sauce. Serve with a little cheese on top.
